I had never had it before and wow, I really liked it.
Oh man, I meant it was a salad, I had never even heard of a cranberry cake!
But the cake sounds good. I might try it.

.Cranberry Celebration Bundt Cake
Ingredients for Cake:
1 box yellow cake mix (Buy the cheap one)
1 four serving size sugar free vanilla instant pudding
5 Large Eggs slightly whipped
1 Tablespoon Vanilla
¼ cup cold coffee or espresso
½ cup butter milk
½ cup apple sauce
1 cup leftover cranberry relish
Ingredients for glaze:
3 Tablespoon cold coffee or espresso
2 cups powdered sugar
Directions for cake:
Preheat oven to 350. Mix first seven ingredients in bowl. Fold in Cranberry relish. Spray Bundt pan with vegetable spray and pour in batter. Bake 60-70 minuets or till toothpick inserted in center comes out clean. Allow to cool 10 minuets then invert on plate to cool, till cool to touch. Don’t rush this step.
Directions for glaze:
Stir coffee and sugar till completely incorporated. Drizzle over cool cake, use it all.
Y’all may want to make extra cranberry relish so you can bake this cake instead of pie or in addition to pie for Thanksgiving dessert. Don’t forget the cool whip for the pies.
The Queen Goddess demands I make a double batch of cranberry relish just so we can have leftovers to eat on our turkey sandwiches.
Yes you can make the cake and freeze it till Christmas. We don’t have that much self control it won’t make Christmas.

This would make a unique part of a pot luck buffet or church social. A cake walk will bring many bidders for something as unique as this. You might also consider dropping one off to your Minister or Rabi. Their wives will enjoy your talent especially when you remind them there are no calories in a gift.
